Sweet & Savory Breakfast Casserole

I wanted to make a high protein breakfast, all in one package deal. I also had a craving for sweet and savory along with apples and ham. I came up with this last minute and its simply delicioso!!! Makes me want to say..Oh my.....

Sweet & Savory Breakfast Casserole

1 dozen large eggs
1 1/2 tsp. Dijon Mustard
Salt & Pepper to taste
1 large Pink Lady apple, diced
2 cups finely diced Ham
1 small Red Onion, diced
4 soft yellow corn tortillas, cut into strips then diced
Olive Oil
Maple Syrup
Red Hot sauce
1 cup shredded Colby jack cheese

1. Preheat oven @ 400. Spray a glass 9x13 pan with cooking spray. Set a side.

2. In pan with oil to coat, saute red onions just until they start sweating. Add apples and cook for 1 minute. Spread on glass pan. Drizzle with Maple syrup. Lightly drizzle the whole surface..don't saturate it..well you can if you want...you have free will! Then add diced ham on top of that and drizzle with a little red hot over the ham. Just a little, scattered, a bit lighter on this one.

3. In pan with oil to coat add tortillas and cook until soft and starts sticking a little. Then add on top of ham mixture.

4. Beat 12 eggs with dijon and salt & pepper. I gave it about a Tbsp of milk..out of habit. Beat up well and pour evenly over mixture in pan.

5. Bake for 20 min. Then spread shredded cheese and bake for another 15 min.

This was making me hungry. The smell was just simply wonderful. It tastes awesome! The combo of the syrup and apples with the savoriness of the ham and onions and red hot..magic!!! Tortillas simply added for depth and texture. Which have their own distinct homemade taste. Need I really say anymore except moan..........

This would be great with sausage, turkey at that. Maybe some sage also and can also change it up and add some cinnamon bread diced in place of tortilla. Ohhh yeah. Mmmmm...enjoy!

  2. Thanks Tammie!!! : ) I truly enjoyed this dish. I just go with what my taste buds like and crave. I look forward in the opportunity in learning and experimenting more along with feeding you all my cafe one day. : )
