Ground Turkey Asian Wraps

I had a craving for something healthy and light and filling tonight. I love me some Asian twist to food on a healthier side. Gives a chance to use more fresh produce and get creative with Asian spices. Got to love Rooster sauce! Got to be in with the Rooster to know what it is. Poor quality photo, but for now I resort to my camera on phone until I buy a mini digital just for this purpose. :)

Ground Turkey Asian Wraps

1 lb Lean Ground Turkey
1 Tbsp. Natural Peanut Butter
1 tsp. minced Garlic
1/4 tsp. White Ground Pepper
1 1/2 tsp. Rooster Sauce (yeah baby)...or more :)
1 tsp. Low sodium Soy sauce
1/2 tsp. Sesame seed oil
1 tsp. Rice wine vinegar

Toppings:
Shredded carrots
Almond slivers
Shredded Cucumbers with: Dash of soy sauce, little wasabi, bit of vinegar, and splenda packet

Boston Lettuce leaves

1. Cook ground turkey until no longer pink. Meanwhile shred about 1/2 cup of cucumber and add seasoning. It will have access water, you may drain or use it as part of the dressing it makes.

2. Add seasonings to Turkey and mix it all well. May adjust to your taste.

Top clean and dry lettuce leaves with ground turkey, then cucumber, top with shredded carrot and almonds.

I enjoyed this so much!! The turkey was so moist and flavorful!! Peanut butter and Rooster sauce..can it get any better. WOW!!! Cucumber relish on top was a nice touch. Cool, light with the kick of Wasabi. Go light on it..it can overpower the other flavors. Love the burning it causes in the nostrils though...wooo hooo.. haha :) Enjoy!!!

Turkey Sausage Meatballs

I eat a lot of JenniO Turkey products, mainly the ground Turkey and Sausage. This is something I like to do for versatility that is easy to do and can make a blah turkey sausage to a moist meatball.

Turkey Sausage Meatballs

1 pkg. JenniO Turkey Italian Sweet Sausage
1/2 cup of Bread Crumbs
1 Tbsp freshly chopped Oregano
1/4 cup Grated Parmesan
Pepper to Taste

1. Squeeze turkey out of casing completely an add to a bowl. Then add all the listed ingredients.

2. Now this is where you need to get dirty. So take off your rings and make sure hands are clean and start digging right in. No need for salt. This sausage has enough flavor. It will be on the stickier side also.

3. Form into balls and add them to a heated pan coated in Olive Oil. Brown on all sides and cover for the remaining cooking time.

I had mine with Vodka Sauce and some whole wheat spaghetti with fresh basil ribbons. Just a quick throw together. These would be good in a meatball sub with some grilled peppers, onions, mushrooms, fresh mozzarella, mmmmm.

Turkey Patties with Lemon Tomato Salad


This is a dish I came up with items I had on hand and experimented at the last minute. It was flavorful and fresh and very satisfying. I would attempt to make it again, with perhaps a turkey meatloaf instead and mashed sweet potatoes. Mmmmm!

Turkey Patties with Lemon Tomato Salad


1 Lemon (Peeled and sectioned)
Bunch of Cilantro
1 Large Greenish Pink Tomato (Quartered without cutting all the way, then sliced)
1/4 of a Large Red Onion (Sliced)

Dressing:
2 Tbsp. Extra Virgin Olive Oil
1 tsp. Balsamic Vinegar
1 Garlic Clove
Few chunks of Mango
Kosher Salt
Cracked Black Pepper

Turkey Patties:
1 lb of Ground Turkey
1/2 c Diced Red Onion
1 Whole Egg
3 Garlic Cloves (Minced)
1/8 tsp Ground Thyme
1/4 tsp Paprika
1/4 c Bread Crumbs
1/2 Parmesan Cheese
Kosher Salt
Cracked Black Pepper

1. Peel the lemons and section out the wedges of lemon pulp. Add to a bowl.

2. Chop up the cilantro. Slice up the tomato and red onions and add with the lemon sections.

3. For the dressing....
Add all ingredients to a food processor and process until garlic is minced. Toss in with the sliced vegetables in the bowl.

Turkey Patties.....

Combine ground Turkey, spices, egg, bread crumbs, onion, minced garlic and last but the big flavor kicker..PARMESAN CHEESE!!! I have to say, Parmesan cheese is one ingredient I can't do without. It will add any deprived dish with that extra sparkle of taste....well just about any dish.

Now, I want you to take your rings off because we are going to get our hands dirty. Dig right in and mix everything together. Pretend its Playdough. Make sure all ingredients are mixed in well and start shaping them little bundles of heaven up.

Heat up a pan and add a little bit of Olive Oil. Add the Turkey patties and cook about 4-5 min on each side, depending on thickness. Juices should run clear and outside lightly browned.

Dish up on a plate with the salad. Was good as is or you can add to a bun with the works. Perhaps some baked sweet potato fries. There I ago with the sweet potato. I may just have to try sweet potato with this either in a turkey loaf or patty.
